Mitchell studies exotic and practical samples of interest to understand physiology, detect allergens, and decode the function of bioactive peptides. Past projects include homeostasis and redox balance in long-lived proteins, gluten in wheat and yeast products, and the proteomics of barley and malt. Outside the lab, he enjoys cycling and spending time with his young family.
